FRUITED CHICKEN SALAD 
2 c. cooked, diced chicken
2 tbsp. soy sauce
1 c. diced fresh apple
1 c. fresh orange sections
1/2 c. halved fresh green grapes
2 c. chopped celery
Lettuce leaves

DRESSING:

6 tbsp. plain low-fat yogurt
5 tbsp. low-calorie mayonnaise
4 tbsp. skim milk
2 packets Equal
1/4 tsp. pumpkin pie spice

Toss chicken with soy sauce. Let stand 15 minutes. Mix fruit with celery; add chicken. Mix again. Chill. Blend dressing ingredients. Arrange fruited chicken salad on lettuce leaves. Spoon dressing over salad or mix lightly.

Makes 6 servings, 1 cup each.
