RICE TOPPED TEXAS JACK 
8 slices bacon, diced
1 med. onion, thinly sliced
1/2 lb. hamburger
1 (1 lb.) can red kidney beans
3 sm. cans tomato sauce
2 tbsp. chili powder
1 tsp. salt & few grains pepper
1/4 lb. cheese, grated
4 c. hot cooked rice

Fry bacon crisp, drain, reserve 2 tablespoons fat. Brown hamburger. Cook onion in 2 tablespoons bacon fat until soft, not brown. Add beans, tomato sauce and seasonings. Add cheese. Stir until melted. Add crisp bacon. Prepare rice according to instructions on package. Serve with bean and cheese mixture.
