MINETTE'S BEANS AND RICE TEXAS
STYLE
 
1 1/4 lbs. dried pinto beans
7 c. water
Pieces of ham (cut up) or hock
1 med. chopped onion
Garlic cloves
1 1/2 tsp. salt
1 lb. smoked link beef (sliced thickly)
1 (10 oz.) can tomatoes (with green chiles)
1/2 c. uncooked rice

Sort and wash beans. Combine beans, water, ham, onion, garlic and salt in large pot or Dutch oven. Bring to a boil. Cover, reduce to medium heat. Cook 45 minutes. Add beef, tomatoes and rice. Cover and simmer 1 hour, stirring occasionally. Makes 6 servings.
