ITALIAN POTATO DOUGHNUTS 
6 sm. to medium potatoes
1 c. flour
1 c. bread crumbs
4 eggs, slightly beaten
3/4 c. Parmesan cheese
Salt, pepper, parsley, and sweet basil to taste

Peel, wash, and but potatoes. Cook as you would for mashed potatoes. Drain and mash. Add eggs and mix. Add flour, bread crumbs, Parmesan cheese, and seasonings. Mix well. Will be like a cookie dough. Roll in logs and shape into doughnuts. Heat about 1 inch of oil in a frying pan. When oil is heated, place doughnut in oil and brown on both sides. Sprinkle with Parmesan cheese.
