COUNTRY BREAKFAST 
6 slices bacon
4 c. cubed potatoes, cooked
1/2 c. chopped green peppers
2 tbsp. chopped onion
Salt and pepper to taste
6 eggs
1 c. grated Cooper cheese

Cook bacon in skillet until crisp. Remove and crumble off most of the fat. Add potatoes, green peppers, and onion. Cook until lightly browned, season to taste. Break eggs over potato mixture. Cover and cook until eggs are done. Sprinkle with cheese and bacon. Cover until cheese melts. Makes 5-6 servings.
