RIVIERA SALAD 
1 recipe Candied Pecans
1 head Romaine lettuce
2 c. strawberry slices or 1 small can Mandarin oranges
1 recipe Poppy Seed Dressing

Layer lettuce, fruit and pecans. Pour dressing on top.

Poppy Seed Dressing:

large 1/2 c. sugar
4 tbsp. red wine or cider vinegar
4 tsp. poppy seeds

Blend dressing ingredients well.

Candied Pecans:

1 egg white
1 tbsp. water
1/2 c. sugar
1/2 tsp. cinnamon
2 c. pecans, broken in pieces or halves

Beat egg and water until frothy. Add sugar and cinnamon; fold in pecans.

Bake on well-greased cookie sheet at 250°F for 1 hour, stirring every 15 minutes.

Stores well in Ziploc bags. Use with romaine lettuce and strawberries or Mandarin oranges and Poppy Seed Dressing.

Option: Not enough time for this recipe? Put 1 cup pecans and 1 cup sugar in nonstick saucepan and over medium-low heat stir until sugar becomes syrup. Cool on wax paper sprayed with nonstick cooking spray.
