SPANISH RICE ROAST 
3 lb. beef chuck roast
1 1/2 c. tomato juice
1 (6 oz.) pkg. Spanish rice mix
1 (3 oz.) can sliced drained mushrooms
1/2 c. water
1 tbsp. snipped parsley
1/2 tsp. salt
Pepper to taste

Season roast with salt and pepper. Place in aluminum foil. Spoon rice mix around roast. Add other ingredients. Bake at 350 degrees for 2 1/2 hours.
