SQUASH CASSEROLE 
2 pkgs. frozen squash
1/2 big onion, diced fine
1 sm. jar pimento
1 box sour cream
1 can cream of chicken soup
1 grated carrot
1/2 stick butter
1/2 bag Herbal Pepperidge Farm stuffing mix

Boil squash and onion until soft. Mash and salt to taste. Mix pimento, sour cream and carrot. Add squash mixture then stuffing until mixture thickens and then add butter. Cook 30 minutes at 350 degrees.
