SPINACH MADELINE 
2 pkgs. frozen chopped spinach
4 tbsp. butter
2 tbsp. flour
2 tbsp. chopped onion
1/2 c. evaporated milk
1/2 tsp. pepper
Red pepper to taste
3/4 tsp. celery salt
3/4 tsp. garlic salt
1/2 tsp. salt
1 tsp. Worcestershire sauce
1 (6 oz.) roll jalapeno pepper cheese, cut into sm. pieces
Buttered bread crumbs

Cook spinach, drain and reserve 1/2 cup liquid. Melt butter; add flour and stir until well blended and smooth, but not brown. Add onion, cook until soft. Add milk and spinach liquid slowly, stirring constantly. Cook until smooth and thick. Add seasonings, Worcestershire sauce and cheese. Combine cream sauce with spinach. Place in casserole dish; top with buttered crumbs. Bake at 350 degrees for 25 minutes.
