CARROT CAKE 
1 tsp. cinnamon
1 tsp. allspice
1/2 tsp. nutmeg
1/4 tsp. cloves
1 1/2 c. whole wheat flour
1/3 c. wheat bran
1 1/2 tsp. baking powder
1 tsp. baking soda
1 c. grated carrots
1 c. raisins or other dried fruit
3/4 c. honey
1 1/2 c. water

Preheat oven to 350 degrees. Combine all the dry ingredients and mix well.

In a separate bowl combine liquid ingredients. Fold the dry ingredients into the wet ones and mix well. Do not overbeat or mix. Pour into a nonstick 9x5x3 inch loaf pan. Bake 1 hour and 15 minutes or until a toothpick comes out clean.

Serving size - 1 slice, 191 calories, 0.6 gram total fat, trace saturated fat, 0 milligrams cholesterol.
