CHEESE AND BACON POTATO SKINS 
2 lg. baking potatoes
1 c. shredded Cheddar cheese
1/2 c. sour cream
1/2 c. real bacon bits

Bake the potatoes, 400 degree oven for 1 hour, or this can be done quickly in a microwave oven. Let cool 10 minutes. Cut each potato in half lengthwise. Scoop out most of the potato. Cut each half of the potato in half again lengthwise so you have 4 slices from each potato. Sprinkle bacon bits evenly in each slice. Top with Cheddar cheese. Put potato slices on cookie sheet and bake at 350 degrees for 10 minutes or until skins are crispy and cheese is melted. Serve with sour cream for dipping.

Since microwave ovens vary in power, you may need to adjust your cooking time.
