JAN'S BLUE CHEESE - BACON
POTATOES
 
4 med. baking potatoes
1/2 c. sour cream
4 tbsp. butter
1 oz. blue cheese, crumbled
1/4 c. milk
3/4 tsp. salt
Dash of pepper
4 slices bacon, crisp cooked, drained and crumbled

Bake potatoes at 400 degrees for 1 hour or until done. Remove from oven, cut lengthwise slice from top and scoop out insides from each. Mash, add sour cream, butter, cheese, milk, salt and pepper and beat with electric mixer until fluffy. Spoon mixture lightly into potato shells, place on baking sheet and return to hot oven for 15 minutes or until heated through. Sprinkle each with crumbled bacon. Yields 4 servings.
