SPICED APPLE RINGS | |
2 gal. cucumbers (peeled and seed removed, and sliced 1/2 inch thick) 2 c. lime 8 qts. water 1 pkg. red hots 2 c. water 1 c. vinegar Small bottle of red food coloring 1 tbsp. alum 2 c. vinegar 1 c. water 10 c. sugar 8 sticks of cinnamon Cover sliced cucumber rings with 8 quarts water and the lime. Let stand 24 hours. Drain cucumbers and rinse. Then cover with clean water and let stand 3 hours. In 2 cups water put 1 package of red hots and let stand until ready to use. Heat together the vinegar, red food coloring and alum. When hot add rings and enough water to cover rings. Simmer 2 hours. Drain and discard liquid. Heat together the vinegar, water, sugar and cinnamon sticks and red hot water. Bring to a boil and add rings. Turn off heat and let stand overnight. The next two days heat the rings and liquid to boiling and let stand. On the third day heat to boiling and put into jars and seal. |
