HOT PINEAPPLE CASSEROLE 
1 (20 ounce) can pineapple tidbits, drained (reserve 3 tablespoons)
1/2 cup sugar
3 tablespoons flour
1 cup shredded sharp cheddar cheese
1 stick butter, melted
1 sleeve Ritz crackers, crushed

Mix pineapple juice, flour and sugar until well blended. Stir in pineapple and cheese.

Bake at 350°F for 20 minutes. Remove from oven. Mix melted butter and Ritz crackers. Put on top and bake 10 to 15 minutes more.

I usually double this recipe and sometimes use mild cheddar cheese.
