TISHA'S PINEAPPLE CHICKEN
CASSEROLE
 
2 1/2 lbs. chicken breasts, boneless, skinless
1/2 c. flour
2 tsp. salt
1/2 tsp. pepper
1/23 tsp. ground thyme
6 tbsp. butter
1 (1 lb.) can pineapple tidbits, drained
1/2 c. pineapple syrup from drained tidbits
1 (4 oz.) can sliced mushrooms, undrained
1 c. Cheddar cheese, shredded

In a clean Ziploc bag, combine flour, salt, pepper and thyme. Add chicken pieces, one at a time, and shake to coat evenly. In a large skillet melt butter; brown chicken. Meanwhile, drain pineapple, reserving syrup. Place chicken in a flat baking pan. Top with mushrooms and liquid, then pineapple tidbits and the 1/2 cup of syrup. Bake in 350 degree oven for 40 minutes; remove from oven and top chicken pieces with cheese. Return to oven; bake an additional 10 minutes. Serves 4 to 6 people.
