HALF AND HALF STRAWBERRY PIE 
1 qt. strawberries
1 c. sugar
3 tbsp. cornstarch
Juice of 1 lemon (may substitute 2 tbsp. concentrated lemon juice)
Cool Whip
Baked pie shell

Cap and wash strawberries. Put half of berries in saucepan and mash. Mix sugar and cornstarch, adding to strawberries that have been mashed. Add lemon juice. Cook until mixture is thick and translucent. Cool. Cut the other half of the berries in half and fold into cooked mixture. One hour before serving, pour into cooked pie shell; top with whipped cream and refrigerate. The combination of cooked and raw berries gives a great flavor.
