CHRISTMAS FRUIT COOKIES 
3/4 c. butter
1 c. sugar
1 egg, separated
1 (3 oz.) container candied cherries, chopped
1 red candied pineapple ring, chopped
1 green candied pineapple ring, chopped
1 c. walnuts, chopped
1 c. flour
1/8 tsp. salt

Cream butter and sugar until light and fluffy. Add egg yolk and mix well. Blend in chopped fruits and nuts. Add flour and salt and blend well. Beat egg white until stiff but not dry. Fold into cookie mixture. Line cookie sheets with aluminum foil. Drop by teaspoon 2" apart on cookie sheet. Bake at 350 degrees for 10 to 15 minutes. Cool before removing from pan. 5 dozen.
