ZUCCHINI BAKE 
3 c. bite-size zucchini
2 grated carrots
1 sm. onion, grated
Pimento and parsley
1 can cream of chicken soup
1/2 c. sour cream
1 pkg. Pepperidge Farm stuffing
1/2 c. melted butter

Mix first 4 ingredients and par boil them; then drain. Blend cream of chicken soup and sour cream. Add to above. Take 1/2 package of Pepperidge Farm stuffing mix; add 1/2 cup melted butter. Take 1/2 of this; add to above mixture. Put in casserole. Cover with remaining stuffing mix. Bake at 350 degrees for 25 minutes.
