BAKED ZUCCHINI 
3 c. sliced summer squash
3 c. sliced zucchini
2 grated carrots
1 med. onion
3 tbsp. butter
1 can cream of chicken soup
1 c. sour cream
1 pkg. stuffing mix
Salt and pepper

Saute onion, squash, zucchini and carrots in 3 tablespoons butter until tender. Mix in cream of chicken soup and sour cream. Salt and pepper to taste.

Prepare stuffing mix according to directions on package. Put half of stuffing mix in the bottom of a casserole dish (lightly buttered). Put squash mixture on top of stuffing, then top with remaining stuffing mix. Bake at 350 degrees for 20 to 25 minutes or until bubbly. Serves many.
