CHEWY ZUCCHINI BAKE 
2 lbs. zucchini, cleaned, sliced 1/4 inch
1/3 c. chopped onions
1/3 c. chopped celery
1/2 c. water
1 tsp. salt
1 can cream of chicken soup
1 c. sour cream or Half and Half
1/8 tsp. pepper
1 c. shredded carrots
5 tbsp. butter, melted
2 c. croutons

Simmer zucchini, onions and celery in water with salt, approximately 10 minutes. Drain, combine soup, sour cream, pepper and carrots. Stir into zucchini mixture.

Preheat oven to 350 degrees. Pour mixture into 12 x 7 x 2 inch baking dish. Combine butter and croutons and spread over mixture. Bake 30 minutes or until done. Makes 6-8 servings.
