ZUCCHINI BAKE 
4 c. zucchini, sliced and cooked
1 c. shredded carrots
1/4 c. onion, chopped
1/2 c. sour cream
8 oz. can water chestnuts, chopped
10 oz. can creamy chicken mushroom soup
2 c. herb seasoned stuffing mix
1/4 c. butter, melted

In a 2 quart shallow baking dish, (11 x 9 x 2 inch), combine all ingredients except stuffing mix and butter. Toss stuffing mix with butter; spoon over vegetables mixture. Bake at 350 degrees for 30 minutes. Makes 6 cups.
