ORIENTAL GRILLED CHICKEN 
3-4 pieces skinned chicken
2 tbsp. vegetable oil
1/4 c. honey
3 tbsp. red wine vinegar
1/4 c. low sodium soy sauce
1 clove garlic, minced
2 tbsp. finely chopped parsley
2 tsp. grated fresh ginger OR 1 tsp. ground ginger
1/2 tsp. pepper

Combine all ingredients except chicken; mix well. Add chicken to marinade, turning to coat all surfaces. Cover and refrigerate for 2 hours turning occasionally. Microwave in marinade on High for 20 minutes. Remove from marinade and grill or broil an additional 5 to 10 minutes until tender, brushing occasionally with marinade. Serves 2-4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
