CARROT CAKE 
2 c. sugar
1/2 c. oil
2 c. flour
2 tsp. baking powder
2 tsp. cinnamon
2 tsp. baking soda
4 eggs slightly beaten
1 c. chopped walnuts
2 c. grated carrots or;
2 jars junior baby food carrots
1/4 c. shredded coconut

Mix together oil and sugar. Sift together flour, baking powder, soda, and cinnamon. Add slowly to oil and sugar. Add eggs, nuts, carrots and coconut. Mix together until well blended. Pour into oiled 13 x 9 inch pan. Bake at 350 degrees for 30 to 40 minutes.

ICING:

3 oz. cream cheese
2 1/2 c. powdered sugar
1 tbsp. vanilla
Dash of orange juice

Cream cheese and sugar. Add vanilla and enough orange juice to make a spreading consistency.
