SAUSAGE OR HAM AND EGG CASSEROLE 
9 eggs
3 c. milk
1 1/2 c. grated Cheddar cheese
1 1/2 tsp. dry mustard
9 slices white bread, crusts removed and cubed
1 1/2 tsp. salt
1 med. green pepper, chopped (optional)
2 (4 oz.) cans sliced mushrooms or fresh steamed
1/2 c. chopped green onion
1 1/2 lbs. pork sausage, cooked, drained, crumbled, or 1 1/2 c. cooked chopped ham

Beat eggs, add cooled sausage or ham. Add other ingredients. Pour into 9 x 13 Pyrex dish (3 quart). Cover with Saran wrap and refrigerate overnight. Let sit out one hour before baking. Bake at 350 degrees until puffed and lightly browned.
