MINT BROWNIES 
2 (1 oz.) sqs. unsweetened chocolate
1/3 c. butter
2 eggs
1/4 tsp. peppermint extract
1/2 tsp. baking powder
1/4 tsp. salt
1 c. sugar
1/2 tsp. vanilla
1 1/4 c. unsifted all-purpose flour
1/2 c. chopped nuts (if desired)

FROSTING:

1/4 c. butter
1 (3 oz.) pkg. cream cheese
2 c. powdered sugar
1/2 tsp. vanilla
1/4 tsp. peppermint extract
Green food coloring

Combine chocolate and butter in large glass mixing bowl. Microwave on high, uncovered, 1 1/2 to 2 minutes or until chocolate and butter are melted. Blend in sugar. Add eggs, one at a time, beating after each. Blend in vanilla and peppermint extract. Add flour, baking powder, and salt; mix well. Stir in nuts; spread in greased 8 inch square glass baking dish. Microwave on high, uncovered, 4 1/2 to 5 1/2 minutes or until no longer doughy, rotating dish once or twice. Cool.

Combine butter and cream cheese for Frosting in glass bowl. Microwave on high 1/2 to 3/4 minutes or until softened. Blend until creamy. Beat in powdered sugar. Blend in vanilla and peppermint extract. Stir in food coloring until desired color. Spread on cooled brownies. Refrigerate until set; cut into 1 inch squares. About 49 bars.

Since microwave ovens vary in power, you may need to adjust your cooking time.
