WHOLE PUMPKIN CASSEROLE 
1 whole med. pumpkin
1 c. raisins
2 c. apples, peeled & chopped
1 c. pecans, chopped
2 tbsp. lemon juice
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/3 c. sugar
Sour cream (opt.)

Remove and save "top lid" of pumpkin. Clean out inside, wash pumpkin and place in baking dish. Mix the other ingredients, except sour cream and bake with lid on pumpkin at 350 degrees for between 1 hour and 1 1/2 hours or until apples are tender. May be served hot or cold with roast pork or ham. Serve from shell, spooning from the pumpkin. Top with sour cream if desired. Serves 8 to 10.
