WASHINGTON'S CHERRY PIE | |
1 Keebler Ready-Crust butter flavored pie crust 1 (16 oz.) can dark sweet pitted cherries, chopped & drained (reserve juice) 15 lg. marshmallows 1/4 tsp. almond extract 1/2 pt. heavy cream, whipped Measure cherry juice and add enough water to make 1 cup liquid; heat until hot, but not boiling. Add marshmallows and stir until dissolved. Chill mixture until slightly thickened. Beat with mixer or whisk until thick and creamy. Stir in almond flavoring. Fold cherry mixture into 1/2 of the whipped cream along with chopped cherries. Pour into butter shell and freeze 5 to 7 hours. Garnish with remaining whipped cream and top with a cherry. |
