CHERRY MIKE 
1 can sweet or sour cherries (as preferred), reserve juice
3 eggs (separate whites & yolks)
3 tbsp. Crisco
3 tbsp. sugar
1 tsp. cinnamon
8 slices bread (white bread)
Water to soak bread in
Milk to moisten bread

TOPPING:

Reserved cherry juice
1/2 tsp. vanilla
3 tbsp. milk
1 tbsp. cornstarch

Soak the bread in water, then pour off water. Pour a little milk over the bread, then pour off milk so that bread is rather dry. Mix egg yolks with sugar, add Crisco and beat well. Drain cherries and reserve juice, add cherries to egg yolk-sugar mix, add cinnamon and stir to blend. Beat egg whites until stiff and fold into the mixture. Place bread slices in bottom of a lightly greased baking dish, spread cherry mixture over bread, bake in 350 degree oven for 45 minutes.

TOPPING: Thin cherry juice with milk, add vanilla and cornstarch and cook until slightly thickened, pour over pan mixture and serve.
