GREEN ENCHILADA CASSEROLE 
1 lb. ground beef (may use ground turkey or chopped cooked chicken breasts)
1/4 tsp. garlic powder
1/4 tsp. cumin
1 c. chopped fresh onion
1/2 lb. grated Longhorn cheese

Brown meat, garlic and cumin. Remove from heat and add chopped onion and cheese; set aside.

In large pot: 1 can cream of chicken soup 1/2 lb. shredded cheese 1 can chopped green chilies 1 jar pimento (chopped) 1 pkg. (dry) HIDDEN VALLEY® Ranch dressing

Stir until cheese melts and everything is mixed well. Roll meat mixture in tortillas and place in baking dish. Pour soup mixture over top. Cover with foil and bake at 375 degrees until heated through and bubbly.
