CORNMEAL PANCAKES 
1 c. cornmeal (white or yellow)
1 tbsp. sugar
1 tsp. salt
1 c. boiling water
1 egg
2 tbsp. butter, melted
1/2 c. milk
1/2 c. all-purpose flour
1 tbsp. baking powder

In bowl, mix together cornmeal, sugar and salt. Add 1 cup boiling water and stir into a thick mush. Let stand for 10 minutes. In a separate bowl, beat together egg, melted butter and milk. Add to cornmeal mixture. Sift together flour and baking powder and add to batter, mixing lightly. Cook pancakes on a greased, heated griddle, browning each on both sides. Serve with maple syrup, or fruit sauce.

Makes 12 (4-inch) pancakes.

I found these to be delicious but a tad sweet, so I recommend using a scant tbsp. of sugar rather than a full tbsp. Otherwise, delicious!
