TONY'S JAIL HOUSE BAKED BEANS | |
4 lbs. Northern beans 2 lbs. thick bacon, sliced 1/2 c. brown sugar 1/2 bottle molasses 1 lg. onion, diced 3 tbsp. mustard 1 1/2 (32 oz.) bottles catsup 1 lb. thin sliced bacon Soak beans overnight. Drain. Add fresh water to a depth of 2 inches above the beans. Cook in a 5 gallon pan. Add 1 large diced onion, thick sliced bacon and bring to boil. Cook for 1 1/2 to 2 hours until beans are tender. Leave cool overnight in a cold place. Place beans in a deep roasting pan(do not drain water off). Add the rest of the ingredients, mix well. Spread the pound sliced beans over the top of the beans. Bake at 325 degrees for 3 hours or until thickened but not dry. You may use hog Jaw in place of bacon. |
