COUNTRY POTATO CAKE | |
1 c. sugar 4 eggs, well beaten 1/2 tsp. vanilla 1/2 c. cocoa, if desired 1 c. walnuts, finely chopped 1 c. Crisco 1 c. mashed potatoes 1 tsp. cloves & cinnamon 2 tsp. baking powder 1/2 c. milk Cream sugar and shortening. Add eggs; mix well. Add potatoes, vanilla, cloves and cinnamon. Mix well. Sift flour, powder and cocoa together. Alternately mix beginning and ending with flour mixture. Lastly add nuts; mix well. Bake in greased cake pan (9 or 10 inch) at 350 degrees for 30 to 40 minutes. |
