GRILLED SHRIMP | |
4 to 5 uncooked shrimp, per person, with shells 1 c. olive oil Juice of 2 lemons 1/4 c. soy sauce 1/2 c. dry red wine 1/4 c. chopped parsley 3 tbsp. fresh or dried tarragon Cut out black vein, but leave shell attached to shrimp. Mix all ingredients. Pour over shrimp. Marinate for at least 2 hours. Cook shrimp over hot coals for 5 to 6 minutes. Shrimp should be moist and tender with slightly charred shells. DIETITIAN'S NOTE: Cutting back on the olive oil in this recipe will reduce the calories significantly. If fresh tarragon is available to you, try making tarragon vinegar. Recipes for homemade vinegars can be found in many Herb Books. They are easy to make, and add a decorative look to your kitchen counter, and they're great marinades. |
