PECAN PRALINES | |
2 c. white sugar 1 c. buttermilk 1 tsp. baking soda 1 tsp. vanilla 2 c. coarsely chopped pecans Mix sugar, buttermilk, and soda in large saucepan or Dutch oven. (It boils up greatly.) Cook over medium heat, stirring constantly, until a small amount of the mixture forms a firm ball when dropped into water. Remove from heat; add vanilla and pecans and beat until it begins to turn creamy looking. Drop immediately onto waxpaper, using teaspoons. I usually wrap mine individually in saran wrap since it keeps them from drying out and becoming hard. |
