BEEFY MEXICAN LASAGNA 
1 lb. ground beef
1 (16 oz.) can tomato sauce
1 pkg. taco seasoning
1 (2.8 oz.) can French fried onions
2 c. shredded lettuce
2 c. shredded cheese
2 eggs, slightly beaten
12 corn tortillas
2 chopped tomatoes

Brown ground beef; drain. Add tomato sauce and taco seasoning. Simmer 5 minutes. Stir in 1/2 can of onions. In bowl, combine 1 cup cheese and eggs. Put a little meat mixture in bottom of 12"x9"x2" pan then place 3 tortillas over that. Overlap 6 tortillas around edge of pan. Spoon in meat mixture. Top with 3 tortillas, then cheese mixture. Bake, covered at 350 degrees for 45 minutes. Sprinkle with remaining cheese, place remaining onions in center of casserole. Bake, uncovered 5 minutes longer. Arrange lettuce and tomatoes around edge of casserole and serve.
