GLAZED PARSNIPS 
6 med. parsnips
3 tbsp. melted butter
1/4 c. brown sugar
1/2 c. cider
1 tsp. salt

Peel parsnips, cut in quarters lengthwise and trim out any woody core. Cook in boiling water until tender. Drain. Lay parsnips in shallow baking dish. Mix together butter, sugar, cider, and salt. Pour over parsnips and bake 20 minutes at 400 degrees.
