LOW CALORIE GERMAN POTATO SALAD 
1/4 c. sliced green onions
1/4 c. water
2 tbsp. & 2 tsp. reduced calorie mayonnaise
2 tbsp. vinegar
1 tsp. sugar
1 tsp. instant vegetable broth & seasoning mix
3 slices bacon, cooked & crumbled
12 oz. cooked red skinned potatoes
1/4 tsp. salt
1/8 tsp. pepper
Lettuce

Combine first 7 ingredients in a skillet; simmer 3-4 minutes, stirring. Place potatoes in a bowl, add salt and pepper. Pour dressing over potatoes, stir to coat. Serve in lettuce leaf cups.
