SEAFOOD MELANGE | |
1/2 lb. scallops 1/2 lb. crabmeat 1/2 lb. sm. steamed shrimp 2 lb. fillet of fish, cubed 1 med. onion, diced 1 c. chopped celery 1/2 c. green pepper (bell) 1/2 c. red bell pepper 2 tbsp. of vegetable oil Salt, to taste Red pepper, to taste Old Bay seasoning, to taste In a skillet or frying pan, saute chopped or diced onion, celery, and peppers in the 2 tablespoons of vegetable oil. Then add cubes of fish and scallops. Let cook at a medium heat until done. Then add steamed shrimp and crabmeat. Season to taste with salt, red pepper, and Old Bay seasoning. Cover and let simmer. Serve hot. Use leftovers the next day (cold or hot) on crackers for a snack. |
