SALMON ON HOT SALT 
2 (1 1/2 inch) salmon steaks
2 tbsp. butter
Generous lemon pepper
Salt to taste
3 tbsp. ReaLemon
Paprika
Coarse salt

Rinse salmon steak in cool water. Pat dry, place between 2 sheets of paper towels. Melt butter and add ReaLemon. When cool, add salmon, coat both sides with mixture. Generously pepper and lightly salt each side; use paprika to color as desired. Dried parsley can be added for effect.

Heat a large cast iron skillet until quite hot with coarse salt on bottom--no grease. Place salmon on hot salt and cook 10 minutes on 1 side and 5 minutes on other.
