UPSIDE - DOWN CHILI PIE | |
1 lb. hamburger 1 med. onion, chopped 2 tbsp. oil 1 1/2 c. tomato sauce (or cooked) 2 1/2 c. cooked kidney beans Salt, pepper, chili powder (if desired) Brown onion in oil. Add meat and cook until browned. Add remaining ingredients and continue cooking for about 20 minutes. Pour into a 2 quart casserole and cover with cornbread mixture. Bake at 400 degrees for 20 minutes. CORNBREAD MIXTURE: 1 c. sifted flour 1 tsp. salt 3 tsp. baking powder 2 tbsp. sugar 3/4 c. cornmeal 1 c. milk 1/4 c. oil 2 eggs, beaten slightly Sift flour, baking soda, salt, and sugar together. Add cornmeal. Add milk and oil to eggs; pour quickly over dry ingredients. Beat until smooth. |
