STRAWBERRY UPSIDE - DOWN PIE | |
3 egg whites 1/2 tsp. vinegar 1/4 tsp. salt 1/2 c. sugar 1/2 tsp. vanilla 3 c. strawberries 1/3 c. sugar 2 tbsp. cornstarch 1/2 c. water 1 9" baked pastry shell Beat egg whites with vinegar and salt to soft peaks. Gradually add the 1/2 cup sugar and vanilla, beating to stiff peaks. Spread on sides and bottom of baked pie shell. Bake at 325 degrees for 12 minutes. Cool. Mash 2 cups of the strawberries. In a saucepan combine 1/2 cup sugar, cornstarch, mashed berries. Cook and stir until mixture thickens and boils. Cook 2 minutes, then cool slightly. Arrange whole berries in pie shell and cover with mixture. Chill until set. |
