SHRIMP WITH LOBSTER SAUCE | |
2 garlic cloves 1/2 tsp. salt Oil (cover bottom of skillet) 1 whole carbot 1 stalk celery 1/2 lb. ground pork 2 c. beef broth 1/2 lb. cooked cleaned shrimp 4 tbsp. cornstarch 1 c. water 2 eggs 3 stalks scallions Soy sauce 1. Heat oil in pan. Crush garlic cloves, brown. Add 1/2 teaspoon salt. Remove garlic. 2. Chop carrots and celery finely. Add to oil. Add pork, stir. Add 2 cups broth. Cook 10 minutes, covered. 3. Add shrimp, cook a few minutes. Add cornstarch and 1 cup water to thicken mixture. 4. Beat 2 eggs. Slowly add to "bubbling" mixture. Chop up scallions. Add quickly to mixture. Add 1 tablespoon soy sauce. Stir. Remove from heat. Serve over steamed or boiled rice. |
