SALMON LOAF WITH EGG SAUCE 
1 egg
1 can salmon
Liquid from salmon plus milk to make 3/4 c.
1 1/2 c. cracker crumbs
1 tbsp. lemon juice
1 tsp. chopped onion
1/8 tsp. each salt & pepper

Blend egg into flaked salmon. Stir in remaining ingredients. Shape into loaf in lightly greased pan. Bake 45 minutes in 350 degree oven. Top with egg sauce, if desired.

EGG SAUCE:

1 tbsp. butter
1 tbsp. flour
1/4 tsp. salt
1/8 tsp. pepper
1 c. milk
1 diced hard-boiled egg

Melt butter over low heat. Blend in flour and seasonings. Cook over low heat, stirring until smooth and bubbly. Stir in milk. Bring to boil, stirring constantly. Boil 1 minute. Add diced egg. Makes 1 cup.
