CARROT LOAF WITH EGG SAUCE 
2 1/2 c. chopped, cooked carrots
2 tbsp. minced onion
2 tbsp. melted butter
2 eggs, well beaten
1 tbsp. flour
1 c. undiluted evaporated milk
1/4 tsp. paprika
Salt & pepper

In large bowl combine all ingredients and stir until well mixed. Pour into well greased loaf pan. Place in shallow pan of hot water and bake at 350 degrees for 1 hour or entirely firm. Slice thickly and serve with egg sauce.

EGG SAUCE: In small saucepan, melt 2 tablespoons butter. Stir in 2 tablespoons flour and 1/2 teaspoon salt, 1/8 teaspoon pepper. Cook, stirring until mixture is bubbly. Slowly add 1 cup milk (you can use remainder of evaporated milk diluted with water to equal a cup) and cook until sauce comes to boil, boil 1 minute. Then add 2 hard boiled eggs finely chopped. Pour over carrots.
