APPLE CHEDDAR SCONES 
1 1/2 c. unsifted flour
1/2 c. toasted wheat germ
2 tsp. baking powder
1 small apple cored and chopped
1/4 c. grated cheddar cheese
1/2 c. milk
1/2 tsp. salt
1 egg white
2 tbsp. sugar
2 tbsp. butter

Grease 8 in. round cake pan. In medium bowl mix flour, wheat germ, baking powder, salt and sugar. With two knives or pastry blender cut butter into flour mixture until it is the consistency of crumbs. Add cheese and apples.

Beat together egg white and milk until well blended. Add to flour mixture until dough forms. Turn dough out onto lightly floured surface and knead 6 times.

Spread dough evenly in cake pan and score deeply with sharp knife into 6 wedges.

Bake at 400°F for 25-30 minutes or until dough springs back to touch. Let stand 5 minutes, remove from pan. Serve warm or cool before serving.
