APPLE AND CHEDDAR GRATIN 
2 lbs. tart apples, peeled and cut into 1/4 inch slices
1 heaping c. grated sharp Cheddar cheese
1/4 c. fresh lemon juice
1/4 c. dark brown sugar
1/4 c. cold butter, cut up
1/2 c. flour
1/2 c. raisins
1/2 tsp. cinnamon
1/8 tsp. salt

Butter up a 1 quart shallow baking dish and arrange apples. Sprinkle raisins, cinnamon and lemon juice. Combine sugar, flour and salt and blend butter until crumbly. Toss Cheddar in. Sprinkle over apples and bake 30 minutes at 350 degrees. Yield: 4-6.
