COLD CUCUMBER DIP 
1 (8 oz.) pkg. cream cheese, softened
1 tbsp. lemon juice
1 cucumber, peeled and diced

Stir lemon juice, a little bit at a time, into softened cream cheese. Adjust amount of lemon juice to compensate for juiciness of cucumber. Stir in cut cucumbers. Cover and chill at least 1 hour. Stir before serving.

Serve with potato chips or vegetables.

SALAD VARIATION: Cut a chilled tomato into sixths to within 1 inch of the bottom. Spread out the sections. Fill with cold cucumber dip. One tomato per serving.
