QUICK BANANA BREAD 
1 3/4 c. sifted flour
2 1/4 tsp. baking powder
1/3 c. shortening
2/3 c. sugar
3/4 tsp. grated lemon rind
2 beaten eggs
1 c. ripe banana pulp
1/2 c. broken nuts

Preheat oven to 350 degrees. Have all ingredients at room temperature. Sift flour and baking powder and set aside. Cream shortening, sugar and lemon rind. Beat into the creamed mixture, banana pulp and eggs. Add sifted ingredients in 3 parts, beat each addition until smooth. Add nuts. Place in greased pan, about about 1 hour. Cool before slicing.
