QUICK BANANA BREAD 
Use an 8 1/2 x 4 1/2 inch loaf pan. Preheat oven to 350 degrees. Have all ingredients at about 75 degrees or room temperature.

Sift: 2 1/4 tsp. double acting baking powder

Blend until creamy: 2/3 c. sugar 3/4 tsp. lemon juice

Beat in: 1 1/4 - 1 1/2 c. ripe banana pulp

Add the sifted ingredients in about 3 parts to the sugar mixture. Beat the batter after each addition until smooth. Place in a greased bread pan. Bake for 50-60 minutes or until done. Cool before slicing.
