FLANK STEAK WITH HERB SAUCE | |
Vegetable cooking spray 2 tsp. low-cal butter 2 tbsp. finely chopped onion 1 sm. clove garlic, minced 1 tsp. flour 1/4 tsp. dried oregano 1/2 tsp. dried thyme 1 tsp. lemon juice 1/3 c. beef broth (preferably from low-sodium bouillon) Salt and pepper to taste 6 oz. (raw wt.) flank steak, trimmed of fat and broiled Minced fresh parsley Spray nonstick skillet with cooking spray. Heat skillet and melt butter. Add onion and garlic; cook and stir over medium heat until onion is lightly golden but not brown. Sprinkle with flour and mix well. Stir in oregano and thyme. Add lemon juice and beef broth; stir with a wire whisk until mixture comes to a boil and is thick and smooth. Season to taste with salt and pepper. Set aside; keep warm. Broil steak. Place on cutting board and cut in half across the grain. Slice half the steak thinly; top the slices with herb sauce and garnish with parsley. Makes 1 serving. |
